Black Beans and Yellow Rice

Amount Measure Ingredient -- Preparation Method

1 10 oz pkg saffron rice mix

2 15 oz cans black beans

3 tablespoons lime juice

2 teaspoons chili powder

1 teaspoon ground cumin

4 tablespoons chopped fresh cilantro

garnishes: sour cream, sliced

green onions, etc.

 

Cook rice per package directions and keep warm.

Meanwhile, drain beans, reserving 2 tablespoons of liquid. Combine beans,

reserved liquid, lime juice, chili powder, and cumin in saucepan. Cook over

medium heat until thoroughly heated. Stir in 1 tablespoon of cilantro. Serve

beans over rice; sprinkle with remaining cilantro.

Garnish if desired and serve.
