I buy cookbooks pretty much every week, and I don't always report on all of them, but this one is particularly good, so I wanted to share it with all of you: Vegetarian Homestyle Cooking c1998 by Jeanne Tiberio, MS, RD I have usually heard of or have seen or have most vegetarian cookbooks, but this one somehow got past me. I got it over the weekend. What makes it unique is that it is *low fat* & healthy cooking, and it gives lots of information and great ideas for making a transition to a vegetarian diet or, at least, eating more vegetarian meals. There are lots of good resources in the back. What is especially good is that each and every recipe includes a nutritional breakdown in addition to diabetic exchanges! The recipes look *great* too!
