I tried to make tapioca pudding last night and it tasted great but it did not set. I attributed it to the fact that it uses one well beaten egg and I tried to use the Enger-g Egg Replacer instead. Can anyone tell me what I could have used instead? What do you normally use when you make puddings that require eggs? Guest guest Posted May 17, 1999 Report Share Posted May 17, 1999 Angie: I've always had good results with the Ener-G Egg Replacer; however, it may be more for baked items instead of puddings and such. I think what would probably work well in a pudding is blended soft silken tofu -- just put the tofu with a little water in a blender or food processor and blend until very smooth. Use 1/4 cup of this mixture to equal 1 egg. You can also blend flax seeds & water, but I'm not sure of the exact amounts or how well this would work -- does anyone else know?
