Guest guest Posted May 17, 1999 Report Share Posted May 17, 1999 Posted by: Tracie * Exported from MasterCook * Green Chili with White Beans Recipe By :The One-Dish Vegetarian--Maria Robbins Serving Size : 12 Preparation Time :0:00 Categories : Beans Chili-No Meat Hot And Spicy Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons olive oil 6 pounds large yellow onions -- peeled and coarsely chopped 6 large carrots -- peeled and coarsely chopped 6 stalks celery -- trimmed and coarsely chopped 8 cloves garlic -- finely chopped 2 4-ounce cans chopped mild green chiles 3 jalapeno peppers -- seeded and finely chopped 4 large ripe tomatoes -- peeled, seeded, and coasely chopped ---or 1 {28-ounce} can whole tomatoes, drained and coarsely chopped--- 1 bunch parsley -- finely chopped 2 tablespoons whole cumin seeds -- toasted 1 tablespoon dried oregano 1 tablespoon dried thyme 4 cups white beans -- soaked 4 hours or overnight 3 quarts vegetable broth or water 1 tablespoon freshly ground black pepper 2 bay leaves Salt -- to taste 1 cup finely chopped fresh cilantro 1 tablespoon fresh thyme leaves 1. Heat the olive oil in a large pot over medium heat. Saute the onions, carrots, and celery for 10 to 15 minutes. Add the garlic and chiles and saute, stirring for 2 minutes longer. Stir in tomatoes, parsley, cumin, oregano, and thyme. 2. Drain the beans and add them together with 2 1/2 quarts broth or water to the pot with the vegetables. Add black pepper and bay leaves. 3. Simmer, uncovered, over low heat for 2 1/2 to 3 hours, until beans are tender and the chili has thickened. Check the chili frequently while it is cooking and add more water or broth if necessary. Season with salt and pepper to taste. Stir in chopped cilantro and fresh thyme leaves. Remove bay leaves and serve.
