Guest guest Posted May 19, 1999 Report Share Posted May 19, 1999 I don't know much about jerusalem artichokes but Lemon Balm I do. It is not really too invasive. It looks like mint but doesn't really act like it but it is perennial. It grows pretty big by the end of the summer. It is wonderful stuff. The only thing I know about Jerusalem Artichokes is that you can use them just like water chestnuts - sliced them in matchstick and stir-fry them along with other julienned veggies. I've done this. They are hard to find around here but when I do (usually sold by Frieda's) I buy them and use them. You can boil them, but peel them before you do anything. I think I have some recipes somewhere.
