This is my third attempt at mailing this...let's hope it works

 

 

This is a good recipe when you have the hankering for the egg-y texture...

 

MMMMM----- Recipe via Meal-Master v8.06

 

Title: Potato Leak Frittata

Categories: Vegan, Tofu

Yield: 4 Servings

 

3 Or 4 good sized potatoes

Peeled (if you like) and

Cubed

1/2 lb Regular tofu

1 Pinch of turmeric

1 tb Lemon juice

A few table spoons of oil

1 Leek, chopped

1 Small onion, chopped

 

put the potatoes with some oil in a baking dish. Bake in preheated

oven (375 F) for about 5 minutes. Stir potatoes and return to oven

for another five minutes. Keep baking and mixing for a total of 20

to 25 minutes. In the meantime, put the tofu, lemon juice and

turmeric in a food processor with some water and blend until smooth.

(should be like a really thick milk shake consistency). Put the

onion, leak with the potatoes and mix in the tofu mixture (in the

baking dish). return to oven for another 20 minutes.
