Holly: Here are several Tzatziki recipes; however, none are vegan. What I

thought is that you might want to try them using the soy milk based yogurt.

I've seen a dry mix for it at an SDA store, and someone told me they had seen

some at a vegetarian supermarket, but I've never tried it myself. Hope this is

helpful. BTW -- Most of these recipes I collected from the mc-recipe list when

someone posted a request there. I don't know who each of them are from.

Tzatziki

2 Cups Plain Yogurt

2 Each Large Cucumbers

Salt To Taste

2 Each Large Cloves Garlic, Minced

1 1/2 Tablespoons White Wine Vinegar

1 Tablespoon Olive Oil

Fresh Ground Pepper(2 Taste)

 

Line a sieve with a damp cheesecloth and place over a large bowl.

Dump the yogurt into the sieve, cover with plastic wrap, and allow to drain in

the refrigerator for 24 hours. Peel the cucumbers. Cut them in alf lengthwise.

Using a teaspoon, scrape out and discard the seeds. Grate the cucumbers into a

colander, using the large holes on a four-sided grater. Salt the cumcumbers and

allow them to drain for 1/2 hour. Place the garlic, vinegar, and olive oil in a

bowl and marinate while the cucumbers are draining. Squeeze the drained

cucumbers as dry as possible and blot on paper towels. Place in the bowl with

the marinated garlic. Add the drained yougurt and stir.

Add a few grindings of fresh pepper and salt if necessary. Serve with toasted

pita bread triangles.

Tzatziki 1

Amount Measure Ingredient -- Preparation Method

2 cups plain yogurt

2 large cucumbers

1 tablespoon minced garlic

1 tablespoon white vinegar

2 tablespoons olive oil.

Salt and pepper to taste

 

Put yogurt in a cheesecloth-lined sieve over a bowl. Drain several hours or

overnight in the refrigerator.

 

Hand method

Peel, seed, and coarsely grate cucumbers. Drain well. Add garlic, vinegar, olive

oil, salt, and pepper to cucumbers and mix well. Add drained yogurt and blend.

 

Food processor method

Grate peeled and seeded cucumber; set aside to drain. Add garlic, vinegar, olive

oil, salt, and pepper. Pulse with a quick on-off. Place in a bowl and combine

with cucumber and yogurt.

 

Yield: 2 cups.

1 small cucumber -- peeled, seeded, and

shredded

2 clove garlic -- peeled and put

through garlic press

1 tsp grated onion

1 Tbsp freshly squeezed lemon juice

1 tsp olive oil

1 tsp fresh dill -- chopped (1/2 tsp.

dried)

salt and freshly ground pepper to taste

 

Drain yogurt and grated cucumber in a cheesecloth lined colander for several

hours. Mix with remaining ingredients and chill.

2 cups Plain yogurt

1 medium Cucumber *

1 Garlic clove -- minced

2 teaspoons Fine olive oil (or more)

1 tablespoon White vinegar

1 tablespoon Finely chopped fresh dill

1 teaspoon Finely chopped fresh mint

1 pinch Salt

 

*Note: Cucumber should be peeled, seeds removed, and diced

or grated.

Drain excess juice if grated.

 

Combine all the ingredients in a glass or earthenware

bowl and chill; to allow flavors to penetrate cucumber.

Serve as a " dip " , or on lettuce leaves as a salad, or with

fried zucchini, eggplant, or fish.

Yogurt, Cucumber, and Garlic Dip (Tzatziki)

1 pound plain yogurt

1/2 cucumber

3 cloves garlic -- crushed

2 tablespoons chopped fresh mint

2 tablespoons olive oil

1 tablespoon white wine vinegar

salt -- to taste

chopped fresh mint -- to garnish

 

Place the yogurt in a medium-sized bowl. Peel and grate the cucumber, squeezing

a little at a time in the palm of your hand to remove the excess water. Stir

the cucumber into the yogurt.

 

Stir in the garlic, fresh mint, olive oil, and vinegar and season with salt, to

taste. Cover and chill in the refrigerator until required. Just before

serving, garnish with chopped fresh mint.
