What I thought is that you might want to try them using the soy milk based yogurt. I've seen a dry mix for it at an SDA store, and someone told me they had seen some at a vegetarian supermarket, but I've never tried it myself. Hope this is helpful. BTW -- Most of these recipes I collected from the mc-recipe list when someone posted a request there. Dump the yogurt into the sieve, cover with plastic wrap, and allow to drain in the refrigerator for 24 hours. Peel the cucumbers. Cut them in alf lengthwise. Using a teaspoon, scrape out and discard the seeds. Grate the cucumbers into a colander, using the large holes on a four-sided grater. Salt the cumcumbers and allow them to drain for 1/2 hour. Place the garlic, vinegar, and olive oil in a bowl and marinate while the cucumbers are draining. Squeeze the drained cucumbers as dry as possible and blot on paper towels. Place in the bowl with the marinated garlic. Add the drained yougurt and stir. Add a few grindings of fresh pepper and salt if necessary. Peel and grate the cucumber, squeezing a little at a time in the palm of your hand to remove the excess water. Stir the cucumber into the yogurt. Stir in the garlic, fresh mint, olive oil, and vinegar and season with salt, to taste. Cover and chill in the refrigerator until required.
