Guest guest Posted May 20, 1999 Report Share Posted May 20, 1999 MUSHROOM CASSEROLE 1 1/2 lbs fresh mushrooms, sliced, you can use a mix of mushrooms here too for fun 1-2 cloves of fresh garlic diced 1 large onion, chopped 1/2 cup chopped celery 1/2 cup chopped green pepper 1/2 cup fat free mayonnaise 8 slices bread, torn into 1-inch pieces..we love SOURdough so try it for ZIP! 4 large egg whites, lightly beaten or 1/4 cup egg substitute 1 cup low or non fat milk 1 can (10 3/4oz) cream of reduced fat mushroom soup, undiluted...low sodium a lite sprinkle of a mix of seasoned bread crumbs and grated Romano cheese, 6 tablespoons, to cover top of casserole great dish for the weekend...make it on friday night...bake in on saturday morning while the coffee perks or tea steeps....let it set for about 15 minutes before serving...leftovers can be delicious the next a.m. when zapped in the micro. serve with fresh fruit and muffins or favourite breakfast breads... great dinner meal too with salad or steamed veggies...and fruit for dessert. it also is a great base for any combo of things you want to add, saute some diced zucchini, artichoke hearts, romas, add some " gimme lean " sausage or similar product....even some non fat cheese, diced, added to the mixture will add more flavor and texture.... -- There are many different people on many different paths.
