Guest guest Posted May 21, 1999 Report Share Posted May 21, 1999 * Exported from MasterCook * Mexican Pita Tostadas Recipe By : Serving Size : 4 Preparation Time :0:15 Categories : Mexican/Southwestern Quick & Easy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 15 oz can black beans -- drained (reserve 3 tbsp. of liquid) 1 1/2 teaspoons ground cumin 1 1/2 teaspoons chili powder 1/8 teaspoon ground red pepper 4 6-inch white or whole wheat pita breads 1 small bell pepper -- chopped 2 medium green onions -- sliced 1 cup shredded Colby-Monterey Jack cheese 1/2 cup shredded lettuce 1/4 cup fresh cilantro salsa & sour cream -- (optional) Place beans, reserved bean liquid, cumin, chili powder, and red pepper in blender or food processor. Cover and blend on high speed until smooth (another option would be to use canned refried black beans with spices). Spread bean mixture on pita breads. Top with bell pepper, onions, cheese, lettuce, and cilantro.
