Drain pasta and set aside. Cook garlic and onion in olive oil in a large skillet over medium heat until tender. Add tomatoes and next 6 ingredients. Cook 5 minutes. Add Parmesan cheese and 1/4 cup mozzarella cheese, stirring until cheese melts. Pour over cooked pasta. Sprinkle with remaining mozzarella cheese. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Pasta Provencal Recipe By : Southern Living Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Vegan Pasta & Pasta Sauces Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 3 cups sliced zucchini 1 cup sliced fresh mushrooms 1/2 cup chopped green bell pepper 1/4 cup chopped onion 2 cloves garlic -- minced 1 14.5 oz can stewed tomatoes -- undrained & chopped 1 teaspoon chopped fresh basil or 1/2 tsp. dried 1/2 teaspoon chopped fresh oregano or 1/4 tsp. dried 1/4 teaspoon salt or to taste 1/4 teaspoon freshly ground pepper 2 cups hot cooked rotini 1/4 cup Parmesan cheese (optional) Heat olive oil in a Dutch oven over medium heat. Add zucchini and next 4 ingredients and cook, stirring constantly, 5 minutes. Add tomato and next 4 ingredients; bring to a boil, and remove from heat.
