Guest guest Posted May 20, 1999 Report Share Posted May 20, 1999 * Exported from MasterCook * Pepper Pasta Recipe By : Southern Living Serving Size : 8 Preparation Time :0:00 Categories : Italian Pasta & Pasta Sauces Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cloves garlic 1 teaspoon grated lemon rind 1/2 teaspoon crushed red pepper 1/4 cup butter or margarine -- melted 3 tablespoons olive oil 1 14.5 oz can vegetable broth 3 tablespoons lemon juice 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 16 ounces fettucine -- uncooked 1 medium red bell pepper -- cut into strips 1 medium green bell pepper -- cut into strips Cook first 3 ingredients in butter or margarine and oil in a medium saucepan over medium heat for 2 minutes, stirring occasionally. Stir in broth and lemon juice; cook until mixture is reduced to 1 1/4 cups (about 25 minutes) stirring occasionally. Stir in salt and pepper and set aside. Cook fettucine in a Dutch oven according to package directions and drain well. Return fettucine to Dutch oven. Add broth mixture and pepper strips. Cook over low heat, tossing gently, until mixture is thoroughly heated. Serve immediately. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Vermicelli w/Tomato-Basil Sauce Recipe By : Southern Living Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Vegan Pasta & Pasta Sauces Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces vermicelli -- uncooked vegetable cooking spray 2 cloves garlic -- minced 1 medium onion -- thinly sliced 5 cups tomatoes (about 5 medium) -- peeled & chopped 1/4 cup fresh basil -- minced 1/4 teaspoon salt or to taste 1/8 teaspoon freshly ground pepper 1 8 oz. can no salt added tomato sauce 1/4 cup freshly grated Parmesan cheese (optional) Cook pasta according to package directions. Drain. While pasta is cooking, coat a Dutch oven with cooking spray; place over medium heat until hot. Add garlic and onion and cook, stirring constantly, 5 minutes or until onion is tender. Stir in tomato and next 4 ingredients. Bring to a boil. Reduce heat and simmer, uncovered, for 15 minutes, stirring occasionally. Add cooked pasta to tomato mixture. Cook, uncovered, until mixture is thoroughly heated, stirring occasionally. Sprinkle with cheese if desired.
