Persian Basmati Rice with Cinnamon and Pistachios

1 tablespoon butter

1 cup uncooked white basmati rice

1/2 teaspoon salt

1 pinch fresh-ground black pepper

1 garlic clove -- minced

2 strips orange peel -- (2 inch)

1/2 teaspoon ground cinnamon

1 pinch curry powder

2 cups water

2 tablespoons toasted pistachios

2 tablespoons yellow raisins (sultanas)

 

In a heavy saucepan, heat the butter over medium heat. Add the rice, and

saute it for 3 minutes, stirring constantly, until the grains become

slightly golden. Add the salt, pepper, garlic, orange peel, cinnamon,

and curry powder. Saute another minute, stirring. Add the water, turn

down the heat, and cover the pan. Let the rice cook over low heat for 25

minutes. Then stir in the pistachios and raisins, remove the 2 orange

peels, and serve. Serves 4
