Feta Dressing

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3/4 cup crumbled feta cheese

1/2 cup plain yogurt

1/3 cup sour cream

1/2 clove garlic -- minced

1/4 teaspoon dried oregano

1/8 teaspoon pepper

 

Place all ingredients in a blender or food processor fitting with a steel blade.

Cover and process until smooth.

 

Variation: For a lower fat version, substitute additional yogurt for the sour

cream.

French Vinaigrette

Amount Measure Ingredient -- Preparation Method

1/4 cup red wine vinegar

1 tablespoon minced shallots

1 tablespoon Dijon mustard

1/2 cup vegetable oil

1/4 cup extra virgin olive oil

 

Place vinegar, shallots, and mustard into a container with a tight-fitting lid.

Shake until completely combined. Add the oils and shake until combined.

 

 

Variation: Use 1/2 tsp garlic, minced, instead of the shallots.

Fresh Herb Balsamic Vinaigrette

1/2 cup extra virgin olive oil

1/4 cup balsamic vinegar

1/4 cup lightly packed parsley leaves

1/4 cup lightly packed basil leaves

1 teaspoon Dijon mustard

1 clove garlic -- minced

 

Place ingredients in a blender or food processor with a steel blade. Cover and

process until smooth.

 

 

Variation: Substitute 1 to 2 shallots for the garlic.

Herbed Buttermilk Dressing

1/2 cup buttermilk

6 tablespoons mayonnaise

3 tablespoons sliced scallions -- green & white parts

3 tablespoons chopped fresh parsley

1/4 teaspoon dried thyme

 

In a medium bowl, stir together all the ingredients.

 

 

Variation: Substitute chopped fresh basil for the parsley. Substitute dried

tarragon for the thyme.
