Italian Dressing

Amount Measure Ingredient -- Preparation Method

1/2 cup red wine vinegar

4 cloves garlic -- halved

3 tablespoons extra virgin olive oil

2 tablespoons vegetable oil

1/8 teaspoon dried oregano

1/8 teaspoon dried thyme

 

Place all ingredients in a container with a tight-fitting lid. Shake until

completely combined; let stand at least 1 hour for the flavors to meld. Store

in refrigerator between uses.

 

 

Variation: Substitute additional olive oil for the vegetable oil.

Russian Dressing

1/2 cup mayonnaise

3 tablespoons ketchup

2 tablespoons sweet or India relish

 

In a medium bowl, stir together all the ingredients.

 

 

Variation: Add chopped fresh parsley to the dressing.

Tahini Dressing

Amount Measure Ingredient -- Preparation Method

1/3 cup tahini -- (sesame paste)

1/3 cup water

3 tablespoons fresh lemon juice

3 cloves garlic -- minced

2 sprigs parsley

 

Place all ingredients in a blender. Cover and process until smooth.

 

 

Variation: Chop the parsley and stir together the ingredients instead of using a

blender.
