Guest guest Posted May 25, 1999 Report Share Posted May 25, 1999 * Exported from MasterCook * Vegetable Run Down Recipe By : Delicious Jamaica!, Yvone McCalla Sobers Serving Size : 6 Preparation Time :0:00 Categories : " New " Vegan Vegetables Caribbean Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups coconut milk 1 cup green beans -- sliced 2 medium carrots -- sliced 1/2 cup tomatoes, peeled & seeded -- chopped 1 whole unripe pepper 1 clove garlic -- crushed & chopped 4 pimento grains (allspice) 1/4 teaspoon thyme 1/4 teaspoon hot pepper -- chopped 1 small head cauliflower -- in chunks 1 sprig celery -- sliced 1/2 cup bean sprouts 1/4 cup onions -- finely chopped 6 okra -- sliced Simmer the coconut milk in a heavy pan until the milk begins to turn oily (about an hour). Add the green beans, carrots, tomatoes, whole hot peppers, and seasonings. Simmer for 10 minutes and add the rest of the vegetables. Simmer for another 10 minutes, remove the whole hot pepper, and serve with boiled potatoes or rice. - - - - - - - - - - - - - - - - - - NOTES : Karen's Note: Coconut milk is very high in fat. There is a " light " version, but I don't know how well it would work for this particular recipe since it says to simmer the coconut milk until it begins to " turn oily " .
