Cut the poached tofu into cubes. Combine the tofu, potatoes, garlic, parsley, and sweet pepper, and toss lightly. Heat the liquid from the boiled potatoes and add the tamari, Jerk Seasoning, and thyme. Simmer the mixture for about a minute, then add the potato mix. Toss lightly and cook until the liquid is absorbed. Heat the oil in a skillet. Stir in the Jerk Seasoning, then add the potatoes and water. Cook until the water evaporates and the mixture is dry. Stir n the chopped parsley and serve. Variation: Jerk Steamed Vegetables -- Follow the recipe for Jerk Potatoes but substitute yams, broccoli, cauliflower, pumpkin, or cabbage for the potatoes. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Jerk Tofu Recipe By : Delicious Jamaica!, Yvonne McCalla Sobers Serving Size : 6 Preparation Time :0:00 Categories : " New " Caribbean Tofu/Tvp/Soy/Seitan Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds tofu ---sliced & lightly poached 1/4 cup Jerk Seasoning (moist) 1/2 cup barbecue sauce -- (approx) ---or tomato sauce Marinate the tofu in the Jerk Seasoning for two hours or overnight if possible. Preheat the oven to 350 ° F. Cover the tofu with barbecue sauce and bake for 15 minutes or cook the marinated tofu over hot coals for about 5 minutes, basting with the sauce.
