Guest guest Posted May 24, 1999 Report Share Posted May 24, 1999 * Exported from MasterCook * Green & White Vegetable Casserole Recipe By :Sunset All-Time Favorite Recipes Serving Size : 6 Preparation Time :0:00 Categories : Artichokes Casserole Spinach Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 6-ounce jar marinated artichoke hearts 2 tablespoons butter or margarine 1 medium onion -- chopped 2 10-ounce packages frozen chopped spinach -- thawed and squeezed dry 1/4 teaspoon ground nutmeg 3/4 teaspoon dried oregano 1 10 3/4-ounce can condensed cream of celery soup 4 eggs -- beaten 1/8 teaspoon black pepper 1 8-ounce package cream cheese -- at room temperature 1/3 cup milk 1/3 cup grated Parmesan cheese Drain artichokes, reserving 2 tablespoons of the marinade; then chop artichokes and set aside. Melt butter in reserved 2 tablespoons marinade in a wide frying pan over medium heat. Add onion and cook, stirring often, until soft, about 5 minutes. Remove from heat and stir in artichokes, spinach, nutmeg, oregano, soup, eggs, and pepper. Spoon mixture evenly into a greased shallow 2-quart baking dish. In a bowl, beat together cream cheese, milk, and Parmesan cheese; spread evenly over spinach mixture.
