Celery Root

I need some advice about how to prepare celery root. I trimmed the root and cut

into 1-inch pieces and put in boiling water. Seems I didn't trim enough of the

outer root covering off and the dish was full of inedible fibers. Wonderful

taste, though. So, did I just not cut enough off or is celery root that fibrous

all the way through? Or, was it an old root? Thanks for the help. Patricia

Yes, Christie it's the same.

Have you seen one? Looks like a big ugly brown round bumpy

horseradish root. I made that mistake once and the soup was so hot I

couldn't eat it......LOL

Yes, I even bought one in a fit of enthusiasm and then couldn't find

any recipes for it and ended up throwing it out. I'll need to give it

another try. I've never seen horseradish root here though. Sounds like

your horseradish soup would certainly clear the sinuses...
