Guest guest Posted May 27, 1999 Report Share Posted May 27, 1999 * Exported from MasterCook * Bulgur with Tofu and Cauliflower Recipe By : 1,000 Vegetarian Recipes by Carol Gelles, page 221 Serving Size : 1 Preparation Time :0:00 Categories : Wednesday--Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 1 cup chopped onions 2 cups vegetable broth 1 8-ounce can stewed tomatoes 1/2 teaspoon dried basil 1/4 teaspoon dried oregano 2 cups cauliflower florets 1 cup bulgur 1 1/2 cups diced tofu 1. In a 3-quart saucepan, heat the oil over medium-high heat. Add the onions; cook, stirring, until softened, about 2 minutes. Add the broth, tomatoes, basil, and oregano; bring to a boil. 2. Add the cauliflower and bulgur. Simmer 5 minutes. Add the tofu and simmer 10 to 15 minutes longer or until bulgur is soft. Note: This dish is slightly moister than most bulgur dishes.
