My favorite brownies are the white flour version that Gelles says her sister makes, except I use 3 eggs (3/4 cups egg beaters) not 4 eggs. We love them: I've never found a brownie recipe that I like better, but plan to try Gelles' version. Preheat the oven to 350F. Grease and flour a 9 x 13-inch baking pan. 2. In a 2-quart saucepan, melt the butter or margarine and the chocolate; set aside. 3. In a large bowl, using an electric mixer, beat the sugar and eggs until thick. On low speed, beat in the melted chocolate, then both flours and the vanilla until just combined. 4. Pour into prepared baking pan. Bake 35 minutes; cool. Cut into 2-inch squares. Variation: In addition to or instead of nuts, stir in 1 cup of raisins or chocolate chips. Gentleman Brownies: Stir in 1 cup chopped walnuts when you add the vanilla. Add eggs and beat until light. Add vanilla. Melt remaining butter with chocolate; cool, and beat into first mixture. Add flour, salt, and nuts. Mix well and pour into greased and floured pan (13 x 9 x 2 inches.) Bake in preheated moderate oven (350 degrees) for about 35 minutes. Cool in pan and cut into small squares.
