Guest guest Posted May 28, 1999 Report Share Posted May 28, 1999 * Exported from MasterCook * Fajitas Recipe By : 1,000 Vegetarian Recipes, Carol Gelles, pg 163 Serving Size : 4 Preparation Time :0:00 Categories : 1,000 Vegetarian Recipes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 1 tablespoon fresh lime juice 1 teaspoon chili powder 1 teaspoon dried oregano 1/4 teaspoon ground cumin 2 lg cloves garlic -- minced 1/8 teaspoon salt or to taste 6 cups cut vegetables (such as zucchini, squash, eggplant, peppers, mushrooms, etc.) 8 7-inch flour tortillas 1/2 cup salsa In a large bowl, stir together the oil, lime juice, chili powder, oregano, cumin, garlic, and salt. Add the vegetables and toss to coat. Let marinate at least one hour. Preheat the broiler. Line a pan with foil; cook vegetables until desired doneness, turning once. Warm the tortillas on the grill or in the oven. Place 1/2 cup of the vegetables in the center of each tortilla, top each with 1 tablespoon of salsa. Fold one side over the vegetables, then roll to form a tube.
