***FILLING***

6 cups sliced and peeled Mcintosh apples

1/2 cup sugar

1/4 cup water

3 tablespoons sieved apricot jam

***DOUGH***

2 cups all-purpose flour

1 cup whole wheat flour

1/2 cup sugar

1 1/2 cups very sof butter or margarine -- (3 sticks)

2 tablespoons lemon juice

1 tablespoon grated lemon rind

 

Makes: 15 3x2 1/2-inch squares; serves: 15

 

I'm not sure if these actually qualify as cookies or as pastry, but either

way, with their old-world flavor, they qualify as superb.

 

1. For the filling, place the apples, 1/2 cup sugar, and the water in a

3-quart saucepan. Cook over medium heat, uncovered, 25 minutes or until

apples are very soft, stirring often during the last five minutes of

cooking. Remove from heat; stir in apricot jam; set aside.

 

2. For the dough, combine both flours and 1/2 cup sugar. Cut in the

butter or margarine until mixture resembles cornmeal. Stir in the lemon

juice and lemon rind.

 

3. Preheat the oven to 325F. Grease a 9 x 13-inch baking pan.

 

4. Divide dough into 2 balls, one slightly larger than the other. Spread

or pat the larger portion of the dough into the bottom of prepared pan.

Bake 15 minutes.

 

5. Gently spread the apple filling over the crust, close to, but not

touching, the edges of the pan.

 

6. Break the remaining dough into pieces. Roll into ropes and form a

lattice top. Bake 1 hour 15 minutes or until apple filling is lightly

browned around the edge of the pan. Cool in pan. Cut into 15 squares.

 

Variation: Instead of preparing the applesauce for the filling, use 6 cups

store-bought applesauce; drain 15 minutes through cheesecloth, then stir in

the apricot preserves. Proceed with recipe.

***CRUST***

1 cup softened butter or margarine -- (2 sticks)

1/2 cup sugar

2 egg yolks

1 teaspoon vanilla

3/4 cup all-purpose flour

1/4 cup whole wheat flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

***FILLING***

1 1/2 cups apricot pie filling or apricot Lekvar

(see separate or use store-bought)

***TOPPING***

3 egg whites

1/2 cup sugar

 

Makes: 35 squares; serves: 12 to 18

 

You can use prepared apricot pie filling (a thick puree marketed by Solo

brand) or Lekvar, but not fruity pie filling, jam, or preserves.

 

1. Preheat the oven to 350F.

 

2. For the crust, in a medium bowl, cream the butter or margarine and '/2

cup sugar. Beat in the egg yolks and vanilla.

 

3. In a medium bowl or on waxed paper, stir together both flours, the

baking powder, and baking soda. Add to the butter mixture. Beat until

combined.

 

4. Spread the dough into an ungreased jelly roll pan (10 1/2 x 15 x 1).

Spread the apricot filling on the dough.

 

5. In a medium bowl, using clean beaters, beat the egg whites until

frothy. Gradually beat in 1/2 cup sugar until whites hold firm peaks.

Spread the meringue over the apricot filling.

 

6. Bake 40 minutes or until top starts to brown. Cut into 35 squares.

 

Variation: Use prune Lekvar instead of the apricot.
