This is something I tried the other night, even my husband liked it!

This is my first time posting, if I need help please let me know how to

do this the right way thanks Tami <:)~

Stuffed Manicotti

1 1/2cup bean mixture (recipe to follow)

1 pkg cooked Manicotti

1 15 oz ricotta cheese

fresh spinach- torn in pices

spagetti sauce

grated cheddar and jack cheese or mozzerella

 

Mix bean mixture, ricotta cheese and torn up spinach in a bowl.

Stuff cooked manicotti with above ingredients.

Place in a casserole dish, cover with spagetti sauce and top with

cheese. Cover with foil and bake 15 min at 350, take off foil and bake

5-10 min, until cheese is slightly browned. Serve warm.

 

 

Bean Mixture

 

1 cup black beans

1 cup black eyed peas

1/2 cup lentils

6 cups water

2 cut up carrots

1 cut up onion

1 can corn

spices to taste:

salt and pepper

bay leaves

basil

any thing else you like!

wheat germ (optional)

rolled oats

 

 

In a Crockpot put all ingredients except wheat germ and rolled oats,

cook on high for 4-5 hrs or until beans are cooked. Add in wheat germ

and rolled oats until thick. Remove bay leaf. I let this cool and put

1-2 cups in ziplock sandwich bags and put in freezer, flat for

individual meals.

You can add brown sugar for a sweeter taste, I have done both and both

are good.
