Guest guest Posted May 30, 1999 Report Share Posted May 30, 1999 * Exported from MasterCook * Chipotle-Tequila Butter - Jump Up's Recipe By : Jennifer Trainer Thompson, Jump Up and Kiss Me Serving Size : 1 Preparation Time :0:00 Categories : Cookbook Spreads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 small chipotle chiles -- (depending on desired heat) 1/2 cup unsalted butter -- softened 1/2 teaspoon lime juice -- freshly squeezed 2 teaspoons tequila 1 teaspoon cilantro -- chopped fresh -- Pinch of ground cumin Submerge the chipotles in hot water until soft, about 15 minutes. Remove the seeds, dry thoroughly, and mince. In a mixing bowl, combine with the remaining ingredients. Beat with a fork until blended. Transfer to a small bowl or ramekin for serving, cover, and refrigerate until firm. Use within a few days, or wrap tightly and freeze for up to several weeks. Makes 1/2 cup.
