Guest guest Posted May 30, 1999 Report Share Posted May 30, 1999 * Exported from MasterCook * Curried Fried Rice with Vegetables Recipe By : Jennifer Trainer Thompson, Jump Up and Kiss Me Serving Size : 8 Preparation Time :0:00 Categories : Cookbook Rice Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons vegetable oil 2 teaspoons ginger -- minced 3 cloves garlic 1 large red onion -- peeled and cut lengthwise into 1/8-inch slices 1 red potato -- or white potato, scrubbed and cut into 1/4-inch dice 1 red bell pepper -- seeded and cut into 1/4-inch dice 1 cup broccoli florets -- 1/2-inch in diameter 1 cup white mushrooms -- quartered 1 teaspoon hot curry powder 1/4 teaspoon hot red chili paste 1 teaspoon brown sugar 3 cups cooked white or brown rice 3 tablespoons light soy sauce 1 cup bean sprouts 1/2 cup scallions -- thinly sliced Serves 6 to 8 Heat the oil in a large heavy skillet over high heat- Add the ginger and garlic, stir until it's sizzling, then add the onion and potato. Cover and cook 3 to 4 minutes, stirring once or twice until the potatoes are half-cooked. Uncover the pan and add the bell pepper, broccoli, and mushrooms and stir-fry 2 minutes until the broccoli begins to turn bright green. Add the curry powder, chili paste, and sugar and stir-fry 2 minutes longer. Stir in the rice and soy sauce and mix rapidly, stirring until the grains are hot before adding the bean spouts and scallions. Stir another 30 seconds or so and remove from heat. Serve immediately. This quickly cooked dish of colorful crisp-tender vegetables lends itself easily to variations. Try diced sweet potato instead of white potato and substitute any of the cabbage clan (napa, green, Chinese, bok choy) for the broccoli.
