Guest guest Posted May 30, 1999 Report Share Posted May 30, 1999 * Exported from MasterCook * Habanero Butter Ala Jump Up and Kiss Me Recipe By : Jennifer Trainer Thompson, Jump Up and Kiss Me Serving Size : 1 Preparation Time :0:00 Categories : Cookbooks, News, Or Mags Spreads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup unsalted butter -- softened 1 red habanero chile -- (fresh)stemmed, seeded, and minced 1 red cayenne pepper -- or jalapeno chile, (fresh) stemmed, seeded, and minced With a fork, mash the chiles into the butter. Transfer to a small bowl or ramekin for serving, cover, and refrigerate until firm. Use within a few days, or wrap tightly and freeze for up to several weeks. Terrific brushed on cheese sandwiches before grilling, tucked into baked squash, or served with bread. Although habaneros of any color will suffice, the orange and red ones provide flecks of color. (Some people also contend that red habaneros are the hottest.) The habanero contributes a fruity, back-of-the-mouth heat, while the cayenne lends a lip-smacking quality to this butter.
