JoAnn * Exported from MasterCook * Curried Vegetable Burgers - The Potato Cookbook Recipe By :The Potato Cookbook Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound potatoes 1 egg yolk 1 onion chopped 2 tablespoons oil plus extra for frying 1 clove garlic -- crushed 2 small leeks -- finely chopped 1 stalk celery -- finely chopped 2 carrots -- finely chopped 2 teaspoons curry powder 2 tablespoons fresh parsley -- chopped milk, optional fresh bread crumbs -- for coating salt and pepper Boil the potatoes in salted water until tender, then drain. When cool enough to handle, peel and mash them with the egg yolk. Meanwhile, cook the onion slowly in the oil until softened. Add the garlic, leeks, celery, and carrots, and continue to cook, stirring occasionally, until the vegetables are tender. Stir in the curry powder for 1 minute. Mix the curried vegetables and the parsley into the potatoes. Add a little milk if the mixture seems dry. Add seasoning, and form into 6-8 flattish cakes. Coat the cakes in bread crumbs, then fry in oil for about 3 minutes on each side until golden.
