Another one from Wild Oats. I used to search for recipes in MC so I

would

not post a duplicate, but now MC 5 takes forever to search. I hope this

is new.

Broccoli & Leek Whip -Wild Oats BB

4 1/2 tablespoons unsalted butter

2 cloves garlic -- minced

1 1/4 pounds leeks

(white and light green parts only)

2 medium russet potatoes -- peeled,quartered

1 1/2 pounds broccoli florets + stem -- peeled,chopped

1/2 cup low-fat yogurt -- at room temp.

1 tablespoon fresh dill

or 1 tsp. dried

 

Prepare vegetables. Thinly slice leeks.

Mince the garlic.

 

In a heavy fry pan over medium heat, melt butter. Stir in leeks, cover,

and cook, stirring frequently.

 

After 10 minutes, add garlic, stir well, and cook another 10 minutes,

stirring often.

 

At the same time, cook potato chunks in boiling, salted water for 15

minutes. Add the chopped broccoli

stems and cook an additional 8 minutes.

Add the broccoli florets and cook about 5 more minutes, until all

veggies are tender.

 

Drain the vegetables well. Transfer to a food processor or blender. Add

the leek and garlic mixture.

Purée until smooth. Return to saucepan. Stir in dill and yogurt.

 

You can cook this up to 2 hours in advance. Simply rewarm on very low

heat, stirring well

for 10 to 15 minutes before serving.
