Guest guest Posted May 29, 1999 Report Share Posted May 29, 1999 * Exported from MasterCook * White Beans with Tomatoes and Basil Recipe By : 1,000 Vegetarian Recipes, Carol Gelles, pg 335 Serving Size : 4 Preparation Time :0:00 Categories : 1,000 Vegetarian Recipes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 1/2 cups chopped tomatoes 2 cloves garlic -- minced 1 cup white beans (cooked from dry or canned, drained) 1/4 cup chopped fresh basil 1/4 cup chopped fresh parsley 1/4 teaspoon salt -- (or to taste) 1/8 teaspoon pepper In a large skillet, heat the oil over medium-high heat. Add the tomatoes and garlic; cook, stirring, until heated through, about 3 minutes. Add the beans, basil, parsley, salt, and pepper; cook, stirring, until heated through. Variation: Add 2 tablespoons vinaigrette and serve as a warm or chilled salad. - - - - - - - - - - - - - - - - - - NOTES : Black beans or chickpeas work just as well.
