Guest guest Posted June 3, 1999 Report Share Posted June 3, 1999 * Exported from MasterCook * Hearty Green Chili with Black Beans Recipe By :Jump Up and Kiss Me, Jennifer Trainer Thompson, pg 84 Serving Size : 10 Preparation Time :0:00 Categories : Jump Up And Kiss Me Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 tomatillos -- husked & rinsed 1 large yellow onion -- diced 1 chayote -- cored & chopped 1 large baking potato -- finely diced 1 green bell pepper -- chopped 1 red bell pepper -- chopped 4 fresh jalapenos -- minced 1 roasted head of garlic -- minced 2 cups New Mexico green chiles -- diced 1 16 oz can chopped tomatoes -- with juice 1 1/2 cups vegetable stock 1/2 cup water 2 teaspoons salt 3 teaspoons ground cumin 1 tablespoon ground coriander 1 tablespoon dried oregano 2 teaspoons freshly ground black pepper 1 tablespoon pure chile powder 2 cups salted tortilla chips 2 cups cooked black beans chopped fresh cilantro for garnish -- (optional) finely diced red onions for garnish -- (optional) finely diced tomatoes for garnish -- (optional) sour cream for garnish -- (optional) Heat a large saute pan or skillet on high heat and char the tomatillos by shaking the pan occasionally, until they are blackened all over. Chop the tomatillos (including skins & seeds). In a large, heavy stockpot, heat the oil over medium-low heat. Saute the onion, chayote, potato, and bell peppers until wilted. Add the jalapenos, roasted garlic, green chiles, tomatoes, stock, water, salt, and spices to the stockpot and stir. Cover and simmer for 30 minutes. In a blender, puree the corn chips with 1 cup of the stew, adding more stew if necessary. Add pureed chips to the stockpot and add the black beans. Stir, and cook for 15 minutes. Assoc. : 0 0 0 0 0 0 0 0 0 0 0 0 0 0 0 0 0 0 0 0 0 0 0 0 * Exported from MasterCook * Hominy Stir-Fry with Southwest Pepper Confetti Recipe By :Jump Up and Kiss Me, Jennifer Trainer Thompson Serving Size : 4 Preparation Time :0:00 Categories : Jump Up And Kiss Me Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 cup green bell pepper -- diced 1 cup red bell pepper -- diced 2 jalapenos -- seeded and chopped 2 large cloves garlic -- coarsely chopped 1 tablespoon unsalted butter 1 teaspoon pure chile powder 1 teaspoon ground cumin 31 ounces .hominy -- white and/or yellow , rinsed and drained well, (about 3 cups) 1 teaspoon salt 1/2 teaspoon freshly ground black pepper -- chopped fresh cilantro, for garnish Lime wedges -- for garnish Place oil in a large skillet over medium-high heat. Add the bell peppers and jalapenos and saute, uncovered, until the peppers begin to soften but still retain their color, about 3 minutes. Add garlic and saute 1 additional minute. (The moisture should also be reduced while stirring.) Transfer mixture to a shallow bowl and keep warm. Melt butter in the same skillet over medium heat. Add the chile powder and cumin and stir to release their fragrance. Add the hominy and stir to coat the kernels. Very loosely cover the skillet with a piece of foil. With a wooden spoon stir the hominy often until it is heated through and you hear the kernels popping, about 3 to 5 minutes. (The foil keeps the popping kernels in the pan.) Do not allow moisture to build up. Uncover and add the bell pepper mixture. Add the salt and black pepper and adjust the seasoning.
