Baked Ginger Peaches And Yogurt

3 large fresh peaches -- peeled, halved, and

-- pitted

Butter-flavored cooking spray

1/2 teaspoon vanilla extract

14 gingersnaps -- crushed

2 tablespoons brown sugar

3 cups vanilla low-fat frozen yogurt

 

1. Preheat oven to 375ø.

 

2. Place peach halves, cut sides up, in an 11- x 7-inch baking dish coated

with cooking spray; sprinkle vanilla evenly over peach halves.

 

3. Combine crushed gingersnap cookies and brown sugar in a small bowl; stir

well. Fill the center of each peach half with crushed cookie mixture. Bake

at 375ø for 25 minutes or until thoroughly heated. Serve peaches warm with

frozen yogurt. Yield: 6 servings (serving size: 1 peach half and 1/2 cup

yogurt). Note: If fresh peaches are unavailable, you may substitute 2

(15-ounce) cans peach halves in light syrup, drained.
