Banana-Raisin Bread Pudding

1 cup skim milk

1/2 cup sugar

3 large eggs

12 (1-oz) slice cinnamon-raisin bread -- cut into 3/4 " cubes

3 bananas -- (about 3/4 pound),

-- cut lengthwise into 1/4 " thick slices

Cooking spray

1 tablespoon sugar

 

1. Preheat oven to 350ø.

 

2. Combine milk, 1/2 cup sugar, and eggs in a large bowl; stir mixture well

with a whisk. Add bread and bananas; toss gently to moisten. Cover and let

stand 10 minutes. Spoon mixture into a shallow 1 1/2-quart baking dish

coated with cooking spray. Sprinkle 1 tablespoon sugar evenly over bread

mixture. Bake at 350ø for 25 minutes or until golden and set. Yield: 8

servings (serving size: about 3/4 cup).
