Combine coconut milk, water, and salt in a medium saucepan; bring to a boil. Stir in rice. Cover, reduce heat, and simmer 25 minutes or until rice is tender and liquid is absorbed, stirring gently after 10 minutes. Remove from heat; stir in sugar and extract. Let stand, covered, 5 minutes. Stir gently before serving. Yield: 5 servings (serving size: 1/2 cup).
