Creamy Coconut Rice Pudding

1 can light coconut milk -- (14-ounce)

3/4 cup water

1/4 teaspoon salt

3/4 cup uncooked long-grain rice

1/2 cup sugar

1/4 teaspoon coconut extract

 

1. Combine coconut milk, water, and salt in a medium saucepan; bring to a

boil. Stir in rice. Cover, reduce heat, and simmer 25 minutes or until

rice is tender and liquid is absorbed, stirring gently after 10 minutes.

Remove from heat; stir in sugar and extract. Let stand, covered, 5 minutes.

Stir gently before serving. Yield: 5 servings (serving size: 1/2 cup).
