Guest guest Posted June 6, 1999 Report Share Posted June 6, 1999 * Exported from MasterCook * Rich Man's Subs Recipe By :The Vegetarian Grill, Andrea Chesman, pg 132 Serving Size : 4 Preparation Time :0:00 Categories : The Vegetarian Grill Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound mushrooms ---preferably portobello -- sliced 1 large onion -- thinly sliced 1 large green bell pepper -- julienned 1 large red bell pepper -- julienned 1/4 cup extra virgin olive oil 4 cloves garlic -- minced 1 tablespoon chopped fresh rosemary -- (or 1 tsp dried) salt & black pepper 2 cups well-seasoned tomato sauce -- heated 4 submarine rolls or small baguettes 4 ounces provolone cheese -- thinly sliced Prepare a medium fire in the grill with a lightly oiled vegetable grill rack in place. Toss the mushrooms, onion, and peppers with the olive oil, garlic, and rosemary. Season to taste with salt & pepper. Divide the vegetables into 2 batches and grill, tossing and turning frequently, until tender and grill-marked, about 10 minutes per batch. Reduce the heat in the grill by spreading out the coals or adjusting the gas flame. To assemble the subs, brush a little tomato sauce inside each roll. Stuff the grilled vegetables inside. Top with about 1/2 cup tomato sauce per roll. Divide the provolone among the sandwiches and stuff into the rolls. Close up each sub so as little cheese peeks out as possible and tightly wrap in foil. Return the subs to the low fire and bake until the rolls are crispy and the cheese is melted, about 10 minutes.
