How about bruchetta for finger food. Thats easy and yum. Just brush

some thick sliced french bread with olive oil and bake for about 15

minutes, then top with some roma tomatoes diced and marinated in olive

oil and rice vinegar with basil. Top with some fresh shredded parmesan.

 

You can make a delicious vegie calzone. I always cheat and use the

frozen bread dough, thaw and roll out. Brush with sauce and add a layer

of ricotta, then some stir fried vegies, I tend to use spinach ,

mushroom and onion. Top with shredded mozerella and a few diced/crushed

cloves of garlic, roll it up and bake it.

 

You can make foccacia, make an olive one and a sun dried tomatoe one and

a basil and garlic or portobello musroom.

 

You can make cheese ravioli, or vegie lasagna with white sauce. If the

sauce is red they'll be expecting meat.

 

Make tiramisu for dessert and you have a lovely feast!

While I don't cook meat any more for anyone, if this is a grilling party I

would buy a variety of sausages to grill, including meat and nonmeat

varieties, and then do everything else vegetarian. I personally wouldn't

do meat hamburgers since I don't want to touch them, but I don't think that

sausages would bother me. I assume that your husband would be comfortable

with meat and would be willing to touch them and grill them.

 

I expect that we will see some wonderful recipes this week from Vegetarian

Grill which will be great for a July 4 picnic.

 

We had a grilling party at work this week, a-bring -our-own-meat-to-grill,

and I ended up bringing a Boco Burger that I cooked the night before,

rather than have my vegetarian food grilled on the same surface as meat.

But to make Debbie's in-laws happy I would be willing to grill my veggie

sausages first.

 

Here is a salad for your party which I took to a picnic last weekend.

Cabbage and Green Apple Slaw

 

Recipe By : Everyday Cooking with Dean Ornish, page 193

Serving Size : 4 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

4 cups shredded cabbage

1 large green apple (tart)

Sweet and Sour Dressing:

1/4 cup cider vinegar

1/4 cup apple juice, frozen concentrate

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon celery seeds

Pepper

 

Serves 4

Put slaw mix in a large bowl. Set the apple on end and slice the flesh

away from the core. Cut the apple, unpeeled, into neat match-stick-sized

pieces. Add to cabbage. Combine dressing ingredients in a small saucepan.

Bring to a boil over moderate heat, then pour over cabbage mixture. Toss to

coat.

Season to taste with pepper.

 

Serving size: 1 1/4 cups
