Combine water and sugar in a small saucepan; bring to a boil, and cook 5 minutes. Pour into an 8-inch square baking dish; freeze 20 minutes. Stir in nectar and lemon juice, and freeze 30 minutes. Stir well with a fork; freeze 1 1/2 hours or until solid (do not stir). Let stand at room temperature until slightly softened. Break frozen mixture into chunks. Place frozen chunks in a food processor; pulse 5 times or until smooth. Serve immediately. Yield: 3 servings (serving size: 1 cup).
