Guest guest Posted June 6, 1999 Report Share Posted June 6, 1999 * Exported from MasterCook * Tropical Sorbet Sandwiches Recipe By : Weight Watchers Magazine, June 1999 Serving Size : 6 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 package refrigerated sugar cookie dough -- (18-ounce) 1 tablespoon unsweetened cocoa 1/3 cup flaked sweetened coconut 2 cups mango or other flavor sorbet -- slightly softened 1. Combine cookie dough and cocoa in a bowl; knead until well blended. Cover and chill 15 minutes. 2. Preheat oven to 350ø. 3. Turn dough out onto a lightly floured surface; roll dough to 1/8-inch thickness. Cut 6 cookies with a 3-inch round cookie cutter; place cookies on a baking sheet. Reroll dough, and cut 6 more cookies; place on baking sheet. Sprinkle coconut evenly over cookies; lightly press coconut into dough. Bake at 350ø for 10 minutes; let cool on pan 10 minutes. Remove cookies from pan; let cool completely on wire racks. 4. Spread 1/3 cup sorbet onto each of 6 cookies, and top with remaining cookies, pressing gently. Wrap sandwiches; freeze at least 30 minutes. Yield: 6 servings (serving size: 1 sandwich). Note: If you prefer plain sugar cookies over chocolate cookies, simply omit the cocoa, and proceed with the recipe.
