Golden Garlic Mashed Potatoes

4 1/2 cups peeled cubed yukon gold or baking potato

3/4 cup 2% reduced-fat milk

3/4 teaspoon salt

1 tablespoon butter

1/8 teaspoon pepper -- up to 1/4

2 garlic cloves -- minced

 

1.Place potato cubes in a medium saucepan, and cover with water; bring to a

boil. Reduce heat, and simmer 15 minutes or until potatoes are tender;

drain. Mash potato; add reduced-fat milk, butter, salt, pepper, and minced

garlic, stirring well. Yield: 4 servings (serving size: 1 cup).
