Guest guest Posted June 8, 1999 Report Share Posted June 8, 1999 * Exported from MasterCook * Linguine With Tomatoes, Spinach And White Beans Recipe By : Weight Watchers, April 1999 Serving Size : 6 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons olive oil 1 tablespoon bottled minced garlic 2 cans diced tomatoes with basil -- garlic, and -- oregano, undrained (14 1/2 ounces) 1 can cannellini beans or other white beans -- drained (15-ounce) 1 package frozen chopped spinach -- thawed, drained, -- and squeezed dry (10 ounces) 6 cups hot cooked linguine -- (about 3/4 pound -- uncooked pasta) 6 tablespoons grated romano cheese 1. Heat oil in a large nonstick skillet over medium-high heat. Add garlic; saute 1 minute. Add tomatoes, beans, and spinach; bring to a boil. Reduce heat, and simmer 15 minutes, stirring occasionally. Spoon sauce over pasta; sprinkle with cheese. Yield: 6 servings (serving size: 1 cup pasta, 1 cup sauce, and 1 tablespoon cheese).
