I crave sweet custard desserts in spring, and this one made with fresh strawberries is creamy without the cream. The apple-strawberry juice I favor is made by Knudsen and is available in co-ops. In food processor or blender, puree arrowroot, juice, tahini, maple syrup and vanilla. Pour into medium saucepan over medium heat; cook, whisking constantly, 20 minutes or until thick. Line 4 ( 1/2 cup) custard cups with sliced strawberries, reserving any extra for garnish. Pour custard into prepared cups, then chill overnight to firm. Serve cold.
