Marinating Mushrooms

and Basic Herb Marinade

Basic Herb Marinade and Salad Dressing

4 garlic cloves -- minced

1/4 cup chopped fresh basil

2 tablespoons chopped fresh oregano

2 tablespoons red wine vinegar

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup extra-virgin olive oil

1/3 cup water

 

1. In a small bowl, combine the garlic, basil, oregano, vinegar, salt, and

pepper. Slowly pour in the olive oil and whisk constantly until the oil is

emulsified.

 

2. Use immediately or store airtight in the refrigerator for up to 4 days.

 

MAKES ABOUT 1/3 CUP

NOTES : This basic dressing is similar in flavor to a bottled Italian salad

dressing. The herbs give it great clinging ability, making it an ideal marinade

for grilled vegetables. This recipe is sufficient for marinating or dressing 1

to 1.5 pounds of vegetables.

1 pound mushrooms

1/3 cup marinade -- such as

Basic Herb Marinade and Salad Dressing

 

Mushrooms are one of the few vegetables that will absorb a marinade. Indeed,

toss a pound of mushrooms in marinade and you can watch the marinade disappear.

Once the marinade has been completely absorbed, there is no need to marinate

longer; one hour is generally enough time to allow. One pound of mushrooms will

absorb 1/3 to 1/2 cup of marinade.
