Amount Measure Ingredient -- Preparation Method

1 package sprouted lentils -- (about 2 cups)

1 ripe tomato -- chopped

1 small cucumber -- chopped

1 green or yellow bell pepper -- chopped

2 green onions -- sliced

1 cup cooked barley

OR other whole grains of your choice

1/2 cup You Won't Believe It's Tofu Dressing -- About

(see separate dressing)

OR fat-free Italian dressing.

 

Combine all ingredients in a serving bowl except the dressing. Add enough

of the dressing to moisten the salad.

 

Yield: 4 to 6 servings, calories: 127, fat: 1g, fiber: 5g.

You Won't Believe It's Tofu Dressing

Amount Measure Ingredient -- Preparation Method

2 garlic cloves -- peeled

or 2 teaspoons garlic paste

1 tablespoon Dijon mustard

6 ounces packaged low-fat tofu

(1/2 of a 12-oz. package)

2 tablespoons soy sauce

2 tablespoons fresh lemon juice

1 teaspoon freshly ground black pepper

 

You can easily double or quadruple this recipe; it stores well in the

refrigerator up to one week. Use it in the Lentil Sprouts Salad (see

separate recipe) or any green salad.

 

Combine all ingredients in a blender and puree until smooth.

 

Yield: 1/2 cup, calories per 1/8th cup: 59, fat: 1g, fiber: 0g.
