I'll post some similar dessert/brunch pasta recipes from The Essential Vegetarian later this week, after I format them. I think I'll try one of them for upcoming company, but I'm not sure which recipe yet. Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups shredded cheddar cheese 1 cup ricotta cheese 1 egg 1/4 cup white sugar 1 teaspoon almond extract 40 ounces canned apple pie filling 8 lasagna noodles -- cooked and drained 6 tablespoons all-purpose flour 6 tablespoons packed brown sugar 1/4 cup quick cooking oats 1/2 teaspoon ground cinnamon 1 dash ground nutmeg 3 tablespoons butter or margarine 1 cup sour cream 1/3 cup packed brown sugar 1 Combine cheddar cheese, ricotta cheese, egg, white sugar, and almond extract in a medium bowl. Blend well. 2 Spread one can apple pie filling over the bottom of a greased 13 x 9 inch pan. Layer with 1/2 of the noodles, and then the cheese mixture. Layer again with remaining noodles, and the second can of pie filling. 3 Combine flour, 6 tablespoons brown sugar, oats, cinnamon, and nutmeg in a small bowl. Cut in butter or margarine until crumbly. Sprinkle over top. 4 Bake at 350 degrees F (175 degrees C) for 45 minutes. Cool for 15 minutes. 5 Meanwhile, prepare garnish by blending sour cream and 1/3 cup brown sugar in small bowl until smooth. Cover, and refrigerate. Serve warm apple lasagna with sour cream garnish. Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup lower fat margarine -- softened 1/2 cup nonfat sour cream egg substitute to equal 6 eggs 2 cups white sugar 1 teaspoon lemon juice 1 teaspoon vanilla extract 8 ounces jarred chunky applesauce -- (8 to 10) 1 pound wide egg noodles raisins cooking spray graham cracker crumbs -- optional ground cinnamon 1. Cook pasta in a large pot of boiling salted water until done. Drain. 2. Mix together margarine, sour cream, egg substitute, sugar, lemon juice, vanilla extract, and applesauce. Stir in noodles and raisins. 3. Spray a 9 x 11 inch pan with cooking spray, and sprinkle the bottom with graham cracker crumbs. Spread noodle mixture into the pan. Sprinkle top with cinnamon. 4. Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes, or until set. Cover with foil if it browns too quickly.
