I don't know if these are really African recipes, but they have an African

country in their name. (One of my son's roommates during his first year at

the Academy was from Morocco. He spent Christmas at our house and I don't

think he liked my American cooking. I wonder if he would like it better

now that I don't prepare meat!)

Moroccan Rice Salad

Amount Measure Ingredient -- Preparation Method

1/2 cup nonfat plain yogurt

1 tablespoon olive oil

2 teaspoons sugar -- or to taste

1 teaspoon curry powder -- or to taste

4 cups cooked basmati rice

cooled to room temperature

1/2 cup peeled and chopped tart apple

1/3 cup chopped green onions

1/4 cup raisins

2 tablespoons snipped fresh chives

Salt and pepper to taste

3 cups torn leaf lettuce

 

Serves 4.

 

A spring salad must have lots of color; this one also makes a full meal.

 

In medium bowl, whisk together yogurt, oil, sugar and curry powder. Stir

in rice, apple, green onions, raisins and chives. Mix well. Season to

taste with salt and pepper. Let stand 20 minutes or until flavors blend.

Serve on lettuce.

Amount Measure Ingredient -- Preparation Method

4 cups soy milk or skim milk

1 teaspoon vanilla extract

1/2 teaspoon Dessert Spice Blend

(see separate recipe)

1/8 teaspoon ground cloves

1/4 teaspoon salt

1 cup whole-wheat couscous

1/4 cup chopped dates

1/4 cup chopped dried apricots

1/4 cup dried cherries or cranberries

 

Heat the milk in a saucepan over medium-low heat just until hot. Stir in

the vanilla, spices and salt. Stir in the couscous. Cook, stirring

frequently, over low heat, 5 minutes. Add the dried fruits and cook,

stirring frequently, 5 to 10 minutes or until the pudding is thick. Serve

warm, at room temperature or chilled.

 

Variations: You can use any dried fruits of your choice or add 1-2

tablespoons of rum or your favorite liqueur; or use other spices such as

mild curry powder.

 

Yield: 6 to 8 servings, calories: 156, fat: 0g, fiber: 2g.

Dessert Spice Blend

Amount Measure Ingredient -- Preparation Method

3 tablespoons ground cinnamon

1 tablespoon ground nutmeg

1 tablespoon ground ginger

1 teaspoon ground cloves

1 teaspoon ground cardamom

1 teaspoon ground mace

 

Hot breakfast cereals and whole grain desserts can be made more delicious

with a cinnamon-based spice blend. Find a good " Apple Pie Spice " or

" Pumpkin Pie Spice " in your supermarket or make your own with this recipe.

 

Mix all ingredients together in a small bowl. Store in an airtight container.

 

Yield: about 1/4 cup, calories: 33 per tbls, 1g fat, 1 gram fiber
