Crunchy n'Dizi (Kenya)

Amount Measure Ingredient -- Preparation Method

8 bananas -- peeled

4 Ounces butter -- melted

4 Ounces peanuts -- chopped

 

Steam bananas in lg saucepan till heated through (a few sec. only). Be

careful they do not become too soft. Drain and roll in melted butter.

Now roll each one separately in peanuts.

Arrange on baking dish and bake for 15 min. at 375F.

Serve with ice cream.

RUBBING METHOD:

1 pound flour

1 teaspoon baking powder

salt to taste

2 ounces butter

2 ounces caster sugar

1/2 teaspoon grated nutmeg

1/2 beaten egg

6 fluid ounces half milk / half water

vegetable oil for deep frying

 

RUBBING METHOD:

In bowl sift flour, baking powder and salt together and rub in butter.

Add sugar and nutmeg and make a well in the center.

Blend egg and milk-water mixture together. Pour into center of flour

and

butter and mix well by hand to form a pastry dough. On a lightly

floured

chopping board, roll out pastry to an even thickness. Cut into 2 "

diamond

shapes and cut a slit in the middle of each. Pull one diagonal through

slit.

 

Heat oil to very hot and fry pieces of twisted pastry till brown and

cooked (try one first). Drain off excess oil on paper towels and serve

hot or cold.
