Guest guest Posted June 16, 1999 Report Share Posted June 16, 1999 * Exported from MasterCook * Golden " Chicken " Patties Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Beans & Legumes Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 15 oz. cans garbanzo beans (chickpeas),drained -- (reserve liquid) 1 1/2 cups uncooked *quick cooking* oats 2 cloves garlic -- minced 1/2 teaspoon ground cumin 1/4 teaspoon red pepper vegetable oil or nonstick cooking spray TOPPING: veg gravy, mushroom gravy, cranberry sauce, etc. In a food processor or blender, process beans with about 1/2 cup of reserved liquid, adding more liquid if necessary, to make a smooth paste. Add garlic, cumin, red pepper, salt & pepper and process to combine well. In a medium mixing bowl, combine bean paste mixture with oats. Mix well, adding additional bean liquid or oats as necessary to make a mixture that holds together well and keeps its shape. Shape mixture into 8 patties about 1/2 " thick. Heat oil in a skillet or spray a nonstick skillet with cooking spray. Over medium high heat, cook patties until golden brown on each side, about 5 minutes. Serve topped with vegetarian gravy, mushroom gravy, cranberry sauce, or other topping of choice. OTHER OPTIONS: Serve patties on a bun with " burger " toppings & condiments.
