Tomato Dill Penne

8 ounces uncooked penne pasta

6 tomatoes -- peeled & chopped

2 tablespoons chopped fresh dill

1 tablespoon grated lemon rind

3/4 teaspoon salt

1/2 teaspoon freshly ground pepper

 

Cook pasta according to package directions, omitting salt, and drain.

Cook tomatoes in a large skillet over medium heat, stirring gently, 2

minutes. Add pasta, dill, and remaining ingredients. Cook, stirring often,

just until thoroughly heated.

Serve immediately.

Tomato Garlic Pasta

Amount Measure Ingredient -- Preparation Method

12 ounces angel hair pasta

20 cloves garlic -- coarsely chopped

2 tablespoons olive oil

3 large tomatoes, peeled & seeded -- chopped

1/4 cup chopped fresh basil

1/2 cup Chablis or other dry white wine

3 tablespoons to 4 balsamic vinegar

1 teaspoon freshly ground pepper

1 cup grated Parmesan or Romano cheese

 

Cook pasta according to package directions. Drain, set aside, and keep

warm.

Cook garlic in olive oil in a large skillet over medium-high heat until

lightly browned. Add tomato and next 4 ingredients. Cook until thoroughly

heated.

Spoon tomato mixture over pasta; sprinkle with cheese. Serve immediately.
