Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Mexican Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces mixed vegetables, frozen 15 ounces pasta ready sauce 1 teaspoon Mexican seasoning 8 each flour tortillas (6-inch size) 1/2 cup cheddar cheese, fat free (Hlthy Choice) -- shredded 1. Microwave vegetables in a medium, microwave-safe dish according to package instructions. 2. In a skillet, over medium heat, combine vegetables, sauce and seasoning. Bring to a simmer. Meanwhile heat tortillas in microwave for 1 to 2 minutes. 3. Spoon vegetable mixture (about 2/3 cup) onto center of tortilla. Sprinkle with 1 tablespoon cheese and fold. Serve on a bed of mixed greens and top with a generous spoonful of mild salsa. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Pasta With Black Beans And Spinach Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Pasta, Couscous, Etc. Vegetables Quick Beans And Legumes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 26 ounces pasta sauce 15 ounces black beans, canned -- rinsed and drained 10 ounces frozen chopped spinach 10 ounces angel hair pasta -- up to 12 Fat Free Parmesan cheese Put water on to cook pasta and cook pasta. Meanwhile, over medium heat in a large saucepan, heat your favorite pasta sauce. Defrost spinach on high for 3 to 4 minutes in the microwave (or leave in refrigerator to defrost in the A.M.). Drain most of the liquid and add spinach to the sauce. Rinse and drain the black beans and add to sauce. By this time the water should be boiling - so cook and drain the pasta.
