Guest guest Posted June 18, 1999 Report Share Posted June 18, 1999 * Exported from MasterCook * Black Beans and Yellow Rice Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Beans & Legumes Low Fat Quick & Easy Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 10 oz pkg saffron rice mix 2 15 oz cans black beans 3 tablespoons lime juice 2 teaspoons chili powder 1 teaspoon ground cumin 4 tablespoons chopped fresh cilantro garnishes: sour cream, sliced green onions, etc. Cook rice per package directions and keep warm. Meanwhile, drain beans, reserving 2 tablespoons of liquid. Combine beans, reserved liquid, lime juice, chili powder, and cumin in saucepan. Cook over medium heat until thoroughly heated. Stir in 1 tablespoon of cilantro. Serve beans over rice; sprinkle with remaining cilantro.
