My family demands that I make this pudding frequently! ;~)

Banana Pudding

 

Recipe By : Simply Heavenly!

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

4 C Cashew Milk

1 C Sucanat -- Or 1/2 C Fructose

1/2 C Dried Coconut -- Shredded

1/2 C Cornstarch

1/4 Tsp Sea Salt

2 Tsp Vanilla

4 Banana -- Ripe

1 1/2 C Tofu Whipped Kreem (optional)

 

Put the milk, sucanat (I use the fructose), coconut, cornstarch, salt, and

vanilla in a saucepan and cook, stirring constantly,

until thick, and remove from heat. Mash 2 bananas and add to

mixture. Slice the other bananas and add. Pour into a dish and

chill until set. Top with Tofu Whipped Kreem.

NOTES : This pudding will turn brown very quickly, so if you

want to serve it at potluck or company it is best to make it

the same day and use an airtight container. Whether brown or

not, it is absolutely wonderful!
